Ethylene Ripening Processes
Ethylene ripening process is a safe and organic process. Former methods as calcium carbide usage harms the fruit and it's dangerous for human as arsenic is produced after the reaction of calcium carbide and water. Ethylene provides completely healthy and efficient ripening process. There are five significant aspects to consider during ripening processes:

1) Concentration: Ethylene concentration unit is ppm (parts per million). Ripening process can be held between 1 ppm and 200 ppm according to the fruit type, characteristics, color, size etc. That's why EGEMAS Consultancy Team is important!

2) Time: It can change between 12-84 hours due to fruit characteristics. It can go up to 3 days for citrus fruit. Excess time can lead fruit to decay.

3) Temperature: 21-30°C is optimal range for ethylene ripening process. Citrus fruits may perform better at degrees close to 30°C. Instant temperature changes should be avoided not to harm the product.
​
4) Humidity: 80-95% humidity is sufficient to get the best result from ripening processes. Steam can be used to obtain needed humidity. The relation between temperture and humidity should be considered as well.
​
5) Ventilation: CO2 is produced by respiration of fruits. Carbondioxide should be removed out of the room by ventilation. Over 1% CO2 can be critical.
